The mountain grazing as well as the seasonal transhumance are part of the activities that La Chabranda still carries out and they underline its connection with tradition, with life in the mountain as well as with the old rural world. In our business we raise mixed-race cattle, both dairy and meat cows, that give typical and genuine flavours to our cuisine. Veal can be tasted in meat dishes, whereas cheese, fresh butter and ricotta can both be tasted in our farm or they can be purchased.
Noteworthy is the Dahü, a raw milk cheese which must be ripened for a lapse of time of at least 2 months and which can be recognized for its deliberately slanting shape in honour of the Dahü, a mythological animal protagonist of many legends belonging to the local oral tradition.
